Vickye's Sweet Potato Casserole
Recipe:
Ingredients:
- 4 medium sweet potatoes (3 1/2 cups total when cooked)
- 3/4 cup sugar
- 1/2 cup butter
- 2 eggs
- 1 tsp vanilla
- 1/3 cup milk
- 1/8 teaspoon salt
Topping:
- 3/4 cup brown sugar
- 1/2 cup flour
- 1/3 cup butter crumbled
- 3/4 cup pecans or walnuts (optional)
Bake at 350°F for 25 minutes.
Preheat the wood-fired oven to 350°-375°F.
Thoroughly wash and peel the sweet potatoes.
Cut the sweet potatoes into even pieces.
We chose to place them into a perforated basket in order to steam them inside the pressure cooker instead of immersing and saturating them with water.
Preparing the topping for the sweet potato casserole:
While the sweet potatoes are cooking and the oven is heating up, measure 1 cup brown sugar.
Next measure 1/2 cup flour and add it to the brown sugar in a bowl.
Add 1/3 cup softened butter to all the above ingredients.
Just a little salt is necessary to add a lot of flavor to the finished dish.
It is time to mix all the ingredients, while incorporating the butter with two forks.
The crumbled topping is ready to be placed on the sweet potato casserole.
Walnuts or pecans are a delicious and optional ingredient to be added to the topping.
With a rolling pin slightly crush the walnuts.
Add the walnuts to the topping mixture.
Back to the sweet potato casserole. It is time to drain the sweet potatoes.
Measure out three cups of cooked sweet potatoes.
Place them into a bowl and mash them thoroughly.
Add 1/2 cup butter to the steaming sweet potatoes.
Next add 1 cup sugar.
Measure out 1 teaspoon vanilla extract.
Pour 1/3 cup milk over the sweet potatoes.
Crack three eggs and add them to the bowl and mix well.
Place all ingredients into an oven safe dish.
Spread the sweet potatoes evenly into the dish.
Sprinkle the topping over the sweet potatoes.
The dish is ready to be placed into the 350°F wood-fired oven.
Place the casserole into the preheated Fontana wood-fired oven and bake for 25 minutes.
Serve immediately! So incredibly good.
