Roasted Poblano Pepper and Artichoke Heart Smash Burger

We keep telling you the Fontana ovens aren’t just for pizza. Have you ever used your Fontana to make a smash burger?
You will need:
- 4 Charred Poblano Peppers
- Buns
- Artichoke Spread
- 4-5 Diced Artichoke Hearts
- ½ cup Sour Cream
- 3 Tbsp Cholula (to taste)
- 3 tsp Bird Pepper (smoked)
- 2 tsp Salt
- 2 tsp Cilantro
- 2 tsp Cumin
Directions
Preheat oven to 500F and place peppers (on a sheet pan) into the oven to blister. You will know it’s time to remove peppers once the peel has begun to char. Remove from the oven and place in a paper bag to “sweat” for 10 minutes. Take peppers out of bag and remove the peel. Slice and set aside.
- Dice up Artichoke Hearts and combine will all ingredients. This will be added to the burger soon.
- Preheat Oven to 600-650 and then place a cast iron skillet inside oven to preheat.
Separate the Ground chuck into beef balls. Safely and partially remove skillet from oven and place beef balls on skillet. Smash with a spatula until evenly flattened (you may want to use a piece of parchment paper between spatula and beef to keep them from sticking together).
Salt beef generously and slide back into the oven. Within 1-2 minutes, the beef will have begun browning on the skillet.
Once desired browning has been reached, flip the patties and cook for another minute.
Remove patties and place on toasted buns with plenty of peppers and a wonderful smearing of the artichoke spread. Enjoy!
