Dee's Corn Pudding Casserole
Here is a delicious and simple recipe passed down from my dear friend Dee. This custardy corn pudding casserole has certainly become one of our favorite side dishes around the holidays. Just follow the simple steps and you will also come to love this amazing dish. It is time to preheat the Fontana Gusto wood-fired oven to 400° F.
Ingredients:
- 2 cups Shoepeg corn (drained)
- 3 large eggs
- 1/2 stick butter
- 2 cups milk
- 1 Tbsp flour
- 1/2 cup sugar
- 1/2 tsp salt
- 1 tsp vanilla extract
Measure 2 cups corn.
Place 1/2 cup sugar in a bowl.
Add 1/2 teaspoon salt
Crack 3 eggs and place them in the bowl with the sugar and salt.
It is time to add 1 Tablespoon flour.
With an electric mixer, mix all ingredients until the flour is compleately incorporated.
Now add 1/2 stick melted butter to the mixture.
Pour in 1 teaspoon vanilla extract into the bowl.
Next add the corn to the mixture.
Stir all ingredients together.
Last but not least add 2 cups milk into the bowl.
Finally pour everything into the casserole dish. We used and oval dish, but this amount is perfect for a 9x9 dish. This will allow the finished product to be a little thicker.
The corn casserole is now ready to be baked in the preheated Fontana wood-fired oven right alongside the Sweet Potato Casserole. Make sure the temperature is at 400° F before placing the dish into the oven. Bake until golden brown and set.
After 45 minutes the eggs mixed with the milk and corn have created a delicious, sweet custardy dish perfect for any celebation.
There is just nothing like cooking and baking food in a wood-fired oven.
Serve it immediately and enjoy every single bite.
